8 Sail is a brewery in Heckington, Lincolnshire UK, which has the most badass distinction of being sat right next to an 8 sail windmill. I can’t think of a cooler location. I’d like to think some of the energy created there helps power the brewery, but I may be romanticizing a bit. Anyway, it’s a really cool looking place nonetheless.
Some day I’d love to man a UK style wood-clad 6bbl system like this. I think it’s the perfect size for someone who actually wants to see and feel what they are doing while brewing, as opposed to pushing a couple buttons on a far away computer terminal.
I also love the open top, flat bottom fermenters these English breweries tend to have. For people as shit-scared of brettanomyces as the English, it’s kind of surprising. Again though, in a small brewery it makes sense to be able to climb in the thing to clean it, and it’s nice to really be able to see the ferment in progress. I wish you could get this kind of kit over here.
